Jamaican Chicken Salad

Jamaican Chicken Salad

  • 1 tsp ground tumeric
  • 1/2 tsp chopped garlic
  • 6 tsp extra virgin olive oil
  • 1/2 cup Clover Krush orange juice
  • 1-1/2 tsp balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 1 packet rocket leaves
  • 1/2 orange, peeled and segmented
  • 50g blueberries
  • 50g raspberries
  • 100g chicken breast, grilled
  • Goats cheese, to serve
  • Pecan nuts, to serve
  1. Combine the turmeric, garlic, olive oil, Clover Krush, balsamic, honey and mustard together and mix well. Season to taste.

  2. Arrange the leaves in a bowl and top with the orange segments, berries, chicken breasts, goats cheese and pecan nuts.

  3. Drizzle with the vinaigrette.
