Smoked Chicken, Apple and Celery Salad with Candied Walnuts
- 2 Smoked chicken breasts, torn
- 2 fennel bulbs, thinly sliced (keep the fronds)
- 4 celery stalks, thinly sliced lengthways
- 2 granny smith apples, cut into rounds
- 4 cups red grapes, halved
- For candied walnuts:
- 100g walnuts
- 2 tbsp brown sugar
- 1 tbsp honey
- 2 tbsp white sesame seeds
- For the dressing:
- 2 tbsp Clover Krush grape juice
- 1 tsp sherry vinegar
- 1 tsp wholegrain mustard
- 2 tsp extra virgin olive oil
- Salt and pepper to taste

Melt the sugar and honey in a pan until dissolved and bubbling. Turn off the heat, add walnuts coating thoroughly and turn out onto a baking sheet lined with baking paper. Immediately sprinkle with sesame seeds and allow to cool.

Mix all the dressing ingredients together until well combined. To make the salad toss all the ingredients, including a small handful of fennel fronds, in a large salad bowl, drizzle with dressing and sprinkle with walnuts.
