Beef Rib Eye, Braaied Tender Stem Broccoli, Parmesan & Salsa Verde Mayo
- Serves 1
- Sea salt
- Black pepper
- Olive oil
- Pea shoots or coriander cress… not large coriander
- 200g beef ribeye
- 50g parmesan
- 4 stems of tender stem broccoli
- 20g parsley
- 20g basil
- 10g mint
- 1 garlic clove
- 6 capers
- 1 lemon juice
- 2 tablespoons of good quality mayo

Season the ribeye and tender stem with oil, salt and black pepper.

Braai the steak and tender stem on a high heat until the ribeye is medium rare and the broccoli is tender and has the bar marks.

Chop the herbs, garlic and capers.

Add the lemon juice.

Mix with the mayo and season to taste.

Slice the beef and plate up with the broccoli.

Shave the parmesan over the beef, broccoli and finish with the dressing and herbs.
