Goats Cheese and Pistachio Stuffed Dates

  • 5 whole dates pitted
  • 50g goats’ cheese
  • 1 tsp honey (plus extra for a drizzle at the end)
  • 1/4 cup pistachios
  • 1 Tbs lemon juice
  1. Cut the dates open and gently create space in the middle of the date like a bowl

  2. Mix together goats’ cheese, lemon juice, honey and pistachios, saving a few to sprinkle on the top

  3. Spoon small amounts of cheese mixture into open dates; sprinkle a few pieces of pistachio on top for colour

  4. Drizzle honey over the top (optional)
