Durban is a popular South African destination, a beach town, and home to the largest Asian community on the African continent. Not only that, but Durban is also home to the largest Indian population outside of India.
Visiting the area, one can tell Indian influence has worked its way through food and culture in the region and made a welcome home in South Africa’s eastern coast. In fact, one could argue that the Indian culture is one of the most influential when building the modern culture of the region. With all the influences on culture and food, it’s no wonder Durban is the inspiration for our Durban Style Lamb Knuckle Curry.
Durban Style Lamb Knuckle Curry
Follow this recipe for Durban Style Lamb Knuckle Curry, a dish inspired by the Indian influence in South Africa.
- 26.45 oz Lamb knuckle
- Mixed Curry Spice
- 2 Onions ((sliced))
- 6 Baby Potatoes ((halved))
- Baby Brinjal ((top & tailed))
- Mint (small handful)
- Coriander (handful)
- 2 tbs Tomato Paste
- 1 Lemon ((halved))
- In a medium pot on medium on heat, slowly sauté the onions with oil and curry spice. Add a touch of water if desired (not more oil).
- Add the garlic, fresh chilies and check seasoning. Add the tomato paste and allow to cook a for few minutes.
- To the pot, add the meat, mint, coriander, brinjal and squeeze of half a lemon. Check seasoning.
- Leave to simmer for 15 minutes
- Add the potatoes and simmer further till potatoes and meat are soft.
- Check Seasoning.
