Frozen Festive Lemon Cheesecake Stack
- 1 Festive Lemon Cheesecake or leftovers
- 1 L vanilla ice cream, softened
- 1 jar Lemon Curd
- 2 cups mixed berries (raspberries and Strawberries)
- 1/2 cup cherries, pitted
- 1/4 cup icing sugar
- 1/2 cup Turkish delight, chopped

Puree 1 cup of berries, cherries and icing sugar until smooth.

Place one layer of Festive Lemon Cheesecake in a cake tin (size will depend on the amount of leftovers) / plastic lined bread tin, followed by a layer of ice cream, drizzle with lemon curd.

Finish with another layer of Festive Lemon Cheesecake.

Place in the freezer for at least two hours to freeze (the sugar in the cheesecake and curd should prevent it from freezing too hard.

Unmold, drizzle with the remainder of the curd.

Sprinkle with Turkish delight and remaining berries and serve with fresh berry and cherry compote.
