Luxury Smoked Trout and Beetroot Salad
- 300g Luxury Smoked Trout
- 6 candy stripe beetroot, thinly sliced on mandolin
- 1 cucumber, ribbons
- 6 patty pans, thinly sliced on mandolin
- Small handful mint leaves
- 1 lemon, thinly sliced
- 2 assorted microgreens
- Edible flowers (nasturtiums if available)
- Extra-virgin olive oil
- Salt and pepper to taste

Scatter the cucumber ribbons, beetroot, patty pans, mint and lemon on a large platter. Finish with smoked trout, microgreens and edible flowers. Drizzle with olive oil and season.
