Maple Grilled Chicken skewers

Maple Chipotle Grilled Chicken Skewers

  • Maple chipotle sauce
  • 2 teaspoons Olive oil
  • 1/4 cup Red onion, chopped
  • 1/2 cup Tomato puree
  • 2T Maple syrup
  • 2t Red wine vinegar
  • 1/2t Mustard powder
  • 1t Chipotle seasoning
  • 1/2t Garlic powder'
  • Chicken
  • 8 Free range chicken thigh, deboned and halved
  • Small wooden skewers, soaked in water
  1. Heat a small saucepan over medium-high heat. 

  2. Add oil and onion and sauté for 2 minutes or until tender. 

  3. Stir in tomato puree, remaining ingredients and 1/4 teaspoon salt. 

  4. Reduce heat to low, and cook 5 minutes, stirring occasionally. 

  5. Set aside.

  6. Skewer chicken pieces, 2 half thighs per skewer.

  7. Coat chicken in olive oil, season and cook on a hot grill pan for 6 minutes on each side or until done.

  8. Baste chicken generously with sauce, turn over, and grill for 2 minutes. Baste again, turn over and grill for 2 more minutes.
