Cake in a cup

Cake in a cup!


  • 1 egg
  • 1 egg yolk
  • 3 tbsp buttermilk
  • 1/4 cup brown or Demerara sugar
  • 1/4 cup cake flour
  • 2 tbsp sifted cocoa powder
  • 3 tbsp dark chocolate chips or chopped dark chocolate


  1. Mix all the wet ingredients in a mixing bowl.

  2. Add the sugar, followed by the flour and cocoa powder. Mix well.

  3. Lastly, add the chocolate.

  4. Pour into oversized mugs, filling them to about three-quarters full.

  5. Microwave each on high for 3 minutes, letting them rest in the microwave for at least 5 minutes before removing them.

  6. TIP: Serve this as a warm pudding: remove from the mug and drench in cream or custard. 

  7. *Buttermilk can be replaced with full-cream milk, melted salted butter or sunflower oil
