Chicken, Bacon, Feta Sandwich with Honey Mustard Dressing
Honey mustard dressing:
- 2 tbs honey
- 2 heaped tsp whole grain mustard
- Splash of balsamic vinegar
- Mix all ingredients together.
- 2 chicken breasts
- 1 tbs balsamic vinegar
- 50g or 2 large tbs feta
- Rocket
- 6 pieces bacon
- 2 Portuguese rolls

Cook bacon as you normally cook bacon – until crispy. On a medium heat.

Slice chicken breast in the middle and butterfly it, add 1 Tbs of balsamic vinegar to cover both chicken breasts, leave in bowl while bacon is cooking.

Leave pan on medium -low heat and cook chicken, should take 5-7 minutes.

Cut rolls in half.

Turn pan up to a high heat and lightly toast the roll or toast in the toaster.

Add a Tbs of honey mustard dressing to the bottom of the roll.

Add chicken, then bacon, then rocket, then feta.

Drizzle honey mustard dressing over the top.
