Chick bacon sandwich

Chicken, Bacon, Feta Sandwich with Honey Mustard Dressing

Honey mustard dressing:

  • 2 tbs honey
  • 2 heaped tsp whole grain mustard
  • Splash of balsamic vinegar
  • Mix all ingredients together.
  • 2 chicken breasts
  • 1 tbs balsamic vinegar
  • 50g or 2 large tbs feta
  • Rocket
  • 6 pieces bacon
  • 2 Portuguese rolls
  1. Cook bacon as you normally cook bacon – until crispy. On a medium heat.

  2. Slice chicken breast in the middle and butterfly it, add 1 Tbs of balsamic vinegar to cover both chicken breasts, leave in bowl while bacon is cooking. 

  3. Leave pan on medium -low heat and cook chicken, should take 5-7 minutes. 

  4. Cut rolls in half. 

  5. Turn pan up to a high heat and lightly toast the roll or toast in the toaster.  

  6. Add a Tbs of honey mustard dressing to the bottom of the roll. 

  7. Add chicken, then bacon, then rocket, then feta. 

  8. Drizzle honey mustard dressing over the top.
