Fresh Sardine Marinade
- 10 fresh sardines, filleted
- Juice of 2 lemons
- 6 tbsp olive oil
- 2 tbsp fresh basil, chopped
- 2 tbsp fresh dill, chopped
- 1 tbsp salt
- 1 tbsp ground black pepper

Lay all the sardines with their skin side facing down on a plate.

In a bowl, combine all the ingredients and mix well. Pour the marinade over the sardines and allow the sardines to soak.

Leave the sardines in the marinade for minimum 20 minutes.

Shape sardines into a circle, with shiny side out.

Serve on your choice of baguette, cracker or pastry.
