Tropika Pineapple Mojito

Ingredients:
- 1 Cup frozen pineapple pieces
- 8 leaves fresh mint
- Zest and juice of 1 lime
- 330 ml Tropika Pineapple
- 250 ml Frankie’s Cloudy Lemonade
- Ice cubes to serve
- 1 Lime (sliced)
Method:
- In a mortar, add pineapple pieces and muddle them using the pestle until all pineapple pieces have broken into small pieces.
- Then, add mint leaves and again muddle for a few seconds to just bruise the leaves and release the essential flavours.
- Pour the muddled mixture into two serving glass.
- Add ice cubes followed by Tropika Pineapple, lime zest and juice, and Frankie’s Cloudy Lemonade.
- Give it a gentle mix, and add some lime slices.
- Enjoy on a hot summers’ day!
